Italian Stuffed Peppers

  • 1 lb lean ground turkey 
  • 6 medium to large red bell peppers seeded and cut in half length-wise
  • 1- 24 oz. jar of spaghetti sauce
  • 1 tsp basil/oregano seasoning (or any blend of Italian herbs)
  • 1 tsp garlic powder (or 1 garlic clove, pressed)
  • 1/2 tsp each of salt and pepper
  • 1- 10 oz. package of frozen chopped spinach, thawed and squeezed dry with cheesecloth or clean towel
  • 2 tbs grated parmesan cheese for filling
  • Extra parmesan to sprinkle over the top of each pepper


  • Preheat oven to 450
  • Line baking sheet with foil or parchment paper
  • Place peppers cut side up on baking sheet
  • Cook ground turkey in frying pan over medium heat
  • Once cooked through add the remaining ingredients and thoroughly stir
  • Fill each pepper with turkey mixture
  • Cover peppers with foil and bake for 30 minutes for a firm pepper — 40-45 minutes for a softer pepper
  • Remove foil, sprinkle with parmesan cheese and place under broiler until cheese melts

These freeze really well!!!
